Abstract [sv]

Arbetet belyser hur samarbetet mellan lokala råvaru- och livsmedelsproducenter och restauranger i Umeå fungerar idag. Syftet var att undersöka samarbetet mellan restauranger i Umeå och lokala livsmedel- och råvaruproducenter i Umeå region. Företrädare för restauranger och producenter från Umeå regionen har intervjuats med hjälp av semistrukturerade intervjuer. I resultatet redovisas att samarbeten mellan restauranger och producenter är beroende av enskilda individer. Vidare visar resultaten att de lokala producenterna efterfrågar ett distributionsnätverk och att en av de intervjuade producenterna är med i ett projekt där ett sådant distributionsnätverk är under uppbyggnad.

Abstract [en]

This student work describes how the collaborative relationship between local food producers and restaurateurs in Umeå is working today. The purpose of this study was to examine the collaboration between restaurants in the city of Umeå and local food producers in the region of Umeå. The method used to examine this is a semi structured interview technique with focus on life world. The results shows that the collaboration between restaurants and producers are especially dependent on certain individuals to continue. Furthermore stating that a distribution network for the local food producers is in demand, and that one of the interviewed producers is involved in building such a network.
