This study discusses energy saving and the possibilities for improvements in kitchens at public schools. The report is based on six school kitchens in the municipality of Borlänge.Personal contacts, visiting the kitchens and own reflections underly the conclusions. Theresults show that no education for energy saving has been done for the kitchen staff. Even ifthey have not received any education on energy saving, they avoid unnecessary usage of themost energy consuming equipment, such as ovens, boiling pans and holding cabinets. The lighting and ventilation are also big and important parts of the energy consumption. There aredifferences between the standard of the kitchens, and the age of the equipment is alsovariable. New equipment is bought when the old equipment is broken, and then it is thecheapest alternative that is chosen for purchase. Proposed actions to improve energyefficiency are, for example, to increase individual awareness when using kitchen equipment,as well as that the life-cycle cost of the equipment should also be considered when buyingnew products. A review of the ventilation and the lighting systems can also lead to energysavings. As no physical measurements have been done in this study, such actions mustunderlie further investigations.
