Food Safety Standards – a comparison with the guidelines of the Swedish National Food Administration


This study examined different Food Safety Standards that are used among Swedish companies, and compared them with the guidelines of food safety supervision published by the Swedish National Food Administration. According to the guidelines local food safety authorities shall possess knowledge of the Food Safety Standards, but this knowledge is often lacking among these inspectors. The standards were also compared with each other, considering their general purpose and structure. The standards were divided into two categories based on obvious differences. Category 1 includes the standards EFSIS, BRC, IFS and AIB, which focus on prerequisite programs. Category 2 includes the standards DS 3027, Req. HACCP and ISO 22000, which focus on the HACCP principles. To recive and maintain a certificate of any of these standards, regular audits are performed by an accredited, impartial certifying body. The results of the study shows that in general all of the examined standards fulfil the requirements of these guidelines. The main differences are how the requirements are described in the standard documents. It can be a help for local authorities to have knowledge of these standards when they perform an inspection. A company that uses a Food Safety standard shall have documented routines of their work with food safety. How well a company lives up to the requirements of a standard very much depends on the inspector from the certifying body. In the end it is the inspector that decides how well the company fulfil the standard requirements.
