Special diets in school kitchens

It is important that food allergies are taken seriously in society especially in schools where children spend a large part of their life. If this isn’t taken seriously in the schools’ kitchen it can have severe consequenses for the student’s life. This report’s main purpose was to examine how safe the meals at schools in Vaggeryd’s municipality are for students with food allergies. Out of the 19 municipal school kitchens 8 have been selected to participate in the project. For this project a checklist was developed and used at the visits. The visits to each kitchen consisted of an interview and an inspection of the kitchen, equipment and routines with regard to  general hygiene requirements and Hazard Analysis and Critical Control Points (HACCP).  The survey showed relatively good results but that improvements should be made in some areas, such as knowledge and written procedures. Many of the deficiencies noted during the visits, such as worn-out cookware, could have been prevented if the kitchen staff had sufficient knowledge. My final conclusion is that the current situation in the school kitchens in Vaggeryd’s municipality does not meet regulatory requirements, but that with improvements in education and written procedures they would have the opportunity to meet them.
