Hygiene work in school kitchen services of Kunskapsskolan Sweden AB

Comparison and summary of the similarities and differences between the cuisines of Central Region.

It is widely acknowledged that lack of food hygiene and handling can result in more or less serious damage to human health. It is therefore necessary for businesses in this area to continuously improve their practices and constantly work towards improving food hygiene and handling. With a study of Kunskapsskolan Sweden AB’s school kitchen services the idea is to conduct a thorough comparison of some of the company’s school kitchen services to develop more coherent and consistent food hygiene and handling practices. This study aims to compare deficiencies between the kitchens, which have been identified through inspection reports and on-site visits, and to compare the self-control work at the different kitchens with each other and weigh them against the model for self-control by Kunskapsskolan Sweden AB. Last but not least, the aim is to highlight good routines and to provide some suggestions for more consistent food hygiene and handling practices.  The basis of the study consists of three parts: 1) reports from municipality inspection reports of the kitchens; 2) personal visits at the school kitchen services; and 3) interviews with one employee at each kitchen. The results show that the self-control at the kitchens overall works satisfactorily, though deficiencies regarding personal hygiene and staff education show there are some common problems. It has also emerged that only one of the kitchens included in this study uses the model of self-control from Kunskapsskolan Sweden AB; the rest have purchased services regarding self-control from consulting companies. Suggested measures are that the kitchens should go through the results of this study and discuss them with each other, and that the staffs in the kitchens discuss their work with, and learn from, each other.
