Reduced food waste in preschools : A qualitative study of seven preschools' food waste in the municipality of Solna, Sweden (English)
Abstract [en]

The purpose of the study was to investigate food waste in preschools in the municipality of Solna, Sweden. Questions asked were why food waste appears in preschools, how the food waste can be prevented and what difficulties there may be with reducing food waste in childcare facilities. 42 preschools in Solna were invited to participate in the study and 7 preschools agreed. 9 persons were interviewed. Interviews held were mostly with kitchen personnel but also with two managers and one pedagogue. Most interviews were held at the preschools but some were held via telephone and e-mail. Results showed that food waste primarily appeared either when the children did not like the food, when new food was introduced or when casserole was served. In order to reduce food waste, the conclusion was that the food should be served in part as required instead of all at once. The menu should be less varied and casserole should be served more rarely. Higher quality food should be a priority and special diets should be expanded to accommodate more children. Personnel and parents should be given the opportunity to bring home leftovers. Only one preschool in the study had food catered to them, that preschool should consider start cooking food in place to reduce their food waste. Difficulties identified were that report systems for children’s non-attendance did not work as well in practice as the systems intended. Some pedagogues appeared uninterested in reducing food waste.
