Abstract [sv]

Bakgrund: Historiskt har recept funnits under lång tid men har inte alltid varit nedskrivna i text. I ämnet Hem- och konsumentkunskap (HKK) ingår recept och instruktioner som en del av det centrala innehållet i läroplanen Lgr22 och något grundskoleelever ska möta i sin undervisning. Att arbeta med instruerande text, som recept är, kräver ett brett kunnande om procedurförståelse, begreppsförståelse och processkunskap. Lärare i HKK måste göra didaktiska val för att anpassa undervisningen efter elevernas förutsättningar.

Syfte: Denna kvalitativa intervjustudie har som syfte att undersöka hur lärare i hem- och konsumentkunskap arbetar med recept i undervisningen. 

Metod: I studien har åtta lärare i hem- och konsumentkunskap intervjuats digitalt via Microsoft Teams 365 utifrån en semistrukturerad intervjuguide. Därefter har intervjumaterialet analyserats enligt en kvalitativ innehållsanalys genom kondensering, kodning och kategorisering med tillhörande subkategorier. 

Resultat: Respondenterna upplever att en stor del av eleverna i grundskolan har svårigheter i arbetet med recept inom skolämnet hem- och konsumentkunskap. Dessa svårigheter visar sig på olika sätt främst i det praktiska arbetet och handlar ofta om ämnesspecifika ord och begrepp samt den aritmetik som förekommer i recepten. Lärarna möter upp dessa svårigheter med att göra olika didaktiska val i undervisningen, bland annat genom att anpassa recepten efter elevgruppen samt genom olika visualiseringstekniker. 

Slutsats: Denna studie belyser vikten av att lärare i hem- och konsumentkunskap på grundskolan bör ha en djup förståelse i receptlitteracitet för att effektivt undervisa i ämnet. De lärare som deltagit i studien har visat på kreativa didaktiska val i undervisningen med recepten. Trots detta upplevs eleverna ha svårt att läsa och följa ett recept. Resultatet av studien antyder att undervisningsmaterial för receptläsning inom HKK borde utvecklas för breddade kunskaper.

Abstract [sv]

Background: Recipes have been with humanity for a long time but have not always been written down in text. The Home Economic (HE) subject includes recipes and instructions as a part of the central content of the Lgr22 curriculum that students must be introduced to during their learning in primary school. Working with instructional text such as a recipe requires a broad knowledge of procedural understanding, conceptual understanding and process knowledge. Teachers in HE must make didactic choices to adapt the teaching to the students' needs.

Objective: This qualitative interview study aims to investigate how teachers of Home and Consumer Studies work with recipes in teaching.

Method: In the study, eight teachers of HE was interviewed digitally via Microsoft Teams 365 based on a semi-structured interview guide. The material was analysed according to a qualitative content analysis through condensation, coding and categorization with associated subcategories. The material was then analysed through the preparation of the result. 

Results: The respondents feel that a large proportion of students in primary school have difficulties working with recipes in HE. These difficulties manifest themselves in different ways, mainly in the practical work and often are due to subject-specific words and concepts as well as the arithmetic that appears in the recipes. The teachers respond to these difficulties by making different didactic choices in teaching, adapting the recipes to the student group and by using different visualization techniques.

Conclusion: This study highlights the importance that primary school HE teachers should have a deep understanding of recipe literacy in order to effectively teach the subject. The teachers who participated in the study have shown creative didactic choices in teaching with the recipes, but despite this the students are perceived to still have difficulty reading and following a recipe. The results of the study suggest that teaching materials for recipe reading within the subject should be developed for broadened knowledge.
